Yogurt Pancakes

  1. In a medium bowl, whisk together the yogurt, milk, eggs, vegetable oil, and maple syrup until smooth.
  2. Add the flour, baking powder, and salt. Whisk gently until just combined.
  3. Heat a large nonstick skillet over medium heat. Lightly grease with oil or nonstick spray.
  4. Spoon about 1/4 cup batter per pancake (or 2 tablespoons for mini pancakes). Cook for 3–4 minutes, until bubbles form on the surface and the edges set.
  5. Flip and cook for another 3 minutes.
  6. Serve warm with applesauce, fruit puree, maple syrup, or nut/seed butter.
