Yogurt Pancakes
Ingredients
- 3/4 cup plain whole-milk Greek yogurt
- 3/4 cup milk
- 2 eggs
- 2 tablespoons vegetable oil
- 1 cup all-purpose flour
- 1 tablespoon maple syrup
- 2 teaspoons baking powder
- ¼ teaspoon salt
Steps
- In a medium bowl, whisk together the yogurt, milk, eggs, vegetable oil, and maple syrup until smooth.
- Add the flour, baking powder, and salt. Whisk gently until just combined.
- Heat a large nonstick skillet over medium heat. Lightly grease with oil or nonstick spray.
- Spoon about 1/4 cup batter per pancake (or 2 tablespoons for mini pancakes). Cook for 3–4 minutes, until bubbles form on the surface and the edges set.
- Flip and cook for another 3 minutes.
- Serve warm with applesauce, fruit puree, maple syrup, or nut/seed butter.
