Thai Chop Salad
Ingredients
Salad
- 1/2 medium green cabbage (3 cups), finely chopped
- 1/2 medium purple cabbage (3 cups), finely chopped
- 1/2 cucumber (1 cup), diced
- 1 red bell pepper (1 cup), diced
- 2 medium carrots (1 cup), shredded
- 1/2 bunch cilantro (1/2 cup), chopped
- 1 cup tofu, air fried (substitute beans of your choice)
- 1/2 cup roasted peanuts, chopped
Dressing
- 3 tablespoons soy sauce
- 1/2 cup peanut butter
- 1 teaspoon sriracha
- 2 tablespoons rice vinegar
- 1 tablespoon lime juice
- 2 tablespoons water
- 1 tablespoon toasted sesame oil
- 1 tablespoon maple syrup
- 1 teaspoon ginger, grated
- 1 teaspoon garlic, minced
Steps
- Mix together dressing ingredients until combined.
- Toss all ingredients with dressing.
- Enjoy.
