  2. In a large bowl, combine all ingredients and mix well until combined.
  3. Heat 2 tablespoons oil in a large skillet over medium heat.
  4. Scoop 1/4 cup of the batter into the pan, pressing down to flatten.
  5. Cook for 2-3 minutes per side, until golden brown and crispy.
