Sweet Potato Fritters
Ingredients
- 3 small sweet potatoes (3 cups), grated
- 2 eggs
- 1/2 cup shredded mozzarella cheese
- 1/4 cup breadcrumbs
- 1 teaspoon cumin
- 1/2 teaspoon dried oregano
- 1/4 teaspoon salt
Steps
- Squeeze out excess moisture from grated sweet potatoes using a clean kitchen towel or cheesecloth.
- In a large bowl, combine all ingredients and mix well until combined.
- Heat 2 tablespoons oil in a large skillet over medium heat.
- Scoop 1/4 cup of the batter into the pan, pressing down to flatten.
- Cook for 2-3 minutes per side, until golden brown and crispy.
- Enjoy with hummus, guacamole, or your dip of choice.
