  1. In a food processor, pulse the oats and walnuts until finely ground.
  2. Add the dates, cinnamon, vanilla, and sea salt. Process until the mixture begins to clump.
  3. If the mixture feels too dry, add water a teaspoon at a time until it holds together when pressed.
  4. Scoop and roll into bite-sized balls.
  5. Store in an airtight container in the fridge for up to a week, or freeze for longer storage.
