Oat Date Walnut Bites
Ingredients
- 1 cup old fashioned oats
- 1 cup Medjool dates, pitted (about 10-12)
- 1 cup raw walnuts
- 1/2 teaspoon cinnamon
- 1/2 teaspoon vanilla extract
- Pinch of sea salt
- 1 to 2 tablespoons water, as needed
Steps
- In a food processor, pulse the oats and walnuts until finely ground.
- Add the dates, cinnamon, vanilla, and sea salt. Process until the mixture begins to clump.
- If the mixture feels too dry, add water a teaspoon at a time until it holds together when pressed.
- Scoop and roll into bite-sized balls.
- Store in an airtight container in the fridge for up to a week, or freeze for longer storage.
