  1. Preheat oven to 300 degrees F.
  2. In a large bowl, mix oats, nuts, seeds, coconut, cinnamon, and salt.
  3. In a separate bowl, whisk maple syrup, oil, and vanilla until smooth.
  4. Pour wet mixture over dry and mix thoroughly to coat.
  5. Spread mixture evenly on a parchment-lined baking sheet.
  6. Bake for 30 to 35 minutes, stirring halfway for loose granola or pressing down and not stirring for clusters.
  7. Let cool completely. Stir in dried fruit (and chia or puffed quinoa if using).
  8. Store in an airtight container at room temperature for up to 2 weeks.
