Granola
Ingredients
- 3 cups old-fashioned rolled oats
- 1/2 cup chopped almonds
- 1/2 cup chopped walnuts
- 1/2 cup raw sunflower seeds or pumpkin seeds
- 1/2 cup unsweetened coconut flakes or shredded coconut
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/3 cup maple syrup
- 1/3 cup melted coconut oil or neutral oil (e.g., avocado or canola)
- 1 teaspoon vanilla extract
- 3/4 cup dried fruit (raisins, cranberries, cherries, chopped apricots, etc.)
- 2 tablespoons chia seeds or puffed quinoa (optional, for texture)
Steps
- Preheat oven to 300 degrees F.
- In a large bowl, mix oats, nuts, seeds, coconut, cinnamon, and salt.
- In a separate bowl, whisk maple syrup, oil, and vanilla until smooth.
- Pour wet mixture over dry and mix thoroughly to coat.
- Spread mixture evenly on a parchment-lined baking sheet.
- Bake for 30 to 35 minutes, stirring halfway for loose granola or pressing down and not stirring for clusters.
- Let cool completely. Stir in dried fruit (and chia or puffed quinoa if using).
- Store in an airtight container at room temperature for up to 2 weeks.
