  1. Finely grate the hard-boiled eggs into a large mixing bowl.
  2. Add the mayonnaise, mustard, salt, pepper, lemon zest and juice, and dill.
  3. Mix gently until well combined. Let sit for 5–10 minutes if using dried dill, to allow the flavors to meld.
  4. Serve on toast, in a sandwich, or with your favorite crackers.
