Egg Salad
Ingredients
- 12 hard-boiled eggs
- 2/3 cup mayonnaise
- 4 tablespoons whole grain mustard
- 1/2 teaspoon salt
- 1 teaspoon black pepper
- Zest and juice of 1 lemon
- 3 teaspoons dried dill, or 3 tablespoons finely diced fresh dill
Steps
- Finely grate the hard-boiled eggs into a large mixing bowl.
- Add the mayonnaise, mustard, salt, pepper, lemon zest and juice, and dill.
- Mix gently until well combined. Let sit for 5–10 minutes if using dried dill, to allow the flavors to meld.
- Serve on toast, in a sandwich, or with your favorite crackers.
