Chocolate Spinach Muffins
Ingredients
- 2 cups baby spinach
- 1 cup whole-milk plain yogurt
- 2 large eggs
- 1/3 cup maple syrup
- 1/4 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 1/2 cups all-purpose flour
- 1/4 cup cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
Steps
- Preheat the oven to 375 degrees F. Grease a standard muffin pan with nonstick spray.
- Add spinach, yogurt, maple syrup, eggs, oil, and vanilla to a blender. Blend until very smooth.
- In a medium bowl, stir together flour, cocoa powder, baking powder, baking soda, and salt.
- Add the blended spinach mixture to the dry ingredients.
- Gently stir or whisk until combined.
- Divide batter among the muffin cups, using a heaping 1/4 cup per muffin.
- Bake for 14–16 minutes, until edges are lightly golden and a tester comes out clean. Cool on a wire rack.
