Chocolate Spinach Muffins

  1. Preheat the oven to 375 degrees F. Grease a standard muffin pan with nonstick spray.
  2. Add spinach, yogurt, maple syrup, eggs, oil, and vanilla to a blender. Blend until very smooth.
  3. In a medium bowl, stir together flour, cocoa powder, baking powder, baking soda, and salt.
  4. Add the blended spinach mixture to the dry ingredients.
  5. Gently stir or whisk until combined.
  6. Divide batter among the muffin cups, using a heaping 1/4 cup per muffin.
  7. Bake for 14–16 minutes, until edges are lightly golden and a tester comes out clean. Cool on a wire rack.
