Brownies with Chocolate Oat Frosting
Ingredients
- 1 cup all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 2 tablespoons ground flaxseed
- 3 tablespoons brewer's yeast
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup melted coconut oil or butter
- 3/4 cup brown sugar (or coconut sugar)
- 1/4 cup honey or maple syrup
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 tablespoons milk
- 1/2 cup rolled oats, finely ground in a blender or food processor
- 3/4 cup dark chocolate chips
Steps
- Preheat oven to 350 degrees F. Line an 8x8-inch pan with parchment paper.
- In a medium bowl, whisk together flour, cocoa powder, flaxseed, brewer's yeast, baking powder, and salt.
- In a large bowl, whisk melted coconut oil or butter, sugar, honey, eggs, vanilla, and milk until smooth.
- Add dry ingredients to wet and mix just until combined.
- Fold in ground oats and dark chocolate chips.
- Pour into the pan and spread evenly.
- Bake for 22-26 minutes, until a toothpick comes out mostly clean (fudgy is good).
- Cool completely before frosting.
Chocolate Oat Frosting
Ingredients
- 3 tablespoons butter, softened
- 2 tablespoons cocoa powder
- 1 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 1 tablespoon milk, plus more as needed
- 1 tablespoon oat flour or finely ground oats
Steps
- Beat butter until creamy.
- Add cocoa powder, powdered sugar, and vanilla, and mix until combined.
- Add milk and combine. Add more milk 1 teaspoon at a time until frosting is smooth and spreadable.
- Mix in oat flour.
- Spread over cooled brownies and refrigerate 15 minutes to set.
