Broccoli Tots
Ingredients
- 1 cup chopped broccoli florets
- 1 cup fully cooked short grain brown rice
- 1/2 cup shredded mozzarella cheese
- 1 tablespoon grated Parmesan cheese
- 2 eggs
- 1/4 cup Italian-style breadcrumbs
- 1/4 teaspoon salt
- 1/4 teaspoon Italian seasoning
Steps
- Preheat the oven to 375 degrees F and line a baking sheet with parchment paper.
- Place chopped broccoli florets into a heat-safe bowl. Bring at least 2 cups of water to a boil and then pour the water over the broccoli. Let sit at least 5 minutes, then drain well.
- Add all ingredients to the bowl of a food processor. Process well to make a uniform batter.
- Portion into 1-tablespoon size ovals and place on the prepared baking sheet.
- Bake for 15 minutes or until firm to the touch and lightly golden brown.
