Vegan Alfredo Sauce
Ingredients
- 12 ounces cauliflower, broken into small florets
- 1/2 cup pine nuts
- 2 tablespoons olive oil
- 1/2 cup water
- 2 cloves garlic
- 2 tablespoons lemon juice
- 2 tablespoons nutritional yeast
- 1 teaspoon salt
- 1/2 teaspoon dijon mustard
Steps
- Bring a large pot of water to a boil.
- Add the cauliflower and pine nuts and boil until cauliflower is fork-tender, about 8 minutes.
- Drain and transfer to a blender.
- To the blender add the olive oil, water, garlic, lemon juice, nutritional yeast, salt, mustard, and ground black pepper to taste.
- Blend until creamy.
- Serve with your choice of pasta, mixing in pasta cooking water if needed to reach desired consistency.
