Minty Frozen Chocolate Balls
Ingredients
- 1/3 C cocoa powder
- 1/3 C oat milk
- 1/3 C maple syrup
- 2 t vanilla extract
- 1/4 t peppermint extract
- 2 ripe bananas
- 2 1/2 C rolled oats
- 1 C Grape-Nuts
Steps
- In a food processor, combine all but the oats and Grape-Nuts.
- Process until smooth and then transfer to a large bowl.
- Add the oats to the bowl and mix well.
- Line a baking sheet with parchment paper.
- Place Grape-Nuts in a small bowl.
- Using a melon baller or small spoon, scoop up wet, sticky chocolate balls and one by one drop them in the Grape-Nuts and roll them around to cover the surface of the ball.
- Place each ball on the parchment paper and flatten slightly with the back of a spoon.
- Freeze the balls.
- Serve frozen or just slightly thawed.
