Green Goddess Chop Salad
Ingredients
- 1 green cabbage, finely diced
- 1 large cucumber, finely diced
- 1/2 bunch green onions, finely diced
- Juice of 2 lemons
- 2 T rice vinegar
- Half an avocado
- 1 C basil
- 1 C spinach
- 2 cloves garlic
- 1 small shallot
- 1/4 C walnuts (substitute nuts of your choice)
- 1/3 C nutritional yeast
- 1 t salt
Steps
- Combine the cabbage, cucumber, and green onions in an extra large bowl and mix well, set aside.
- To a blender add the lemon juice, rice vinegar, and avocado.
- To the blender add the remaining ingredients and blend until smooth. Add water 1 tablespoon at a time if the dressing is too thick.
- Pour the dressing over the chopped salad and mix well.
- Dip your favorite chip!
